Instructions

  • Preheat oven to 350°F (175°C). Grease and flour 3 round cake pans.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, beat together the butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  • Divide the batter evenly into 5 bowls. Add different food coloring to each bowl to create the desired rainbow colors.

  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow cakes to cool completely before frosting.
  • For the frosting, beat together the butter, powdered sugar, heavy cream, and vanilla extract until light and fluffy.
