  • 4 cups chicken broth
  • 2 cups water
  • 3 medium potatoes, thinly sliced
  • 1 teaspoon crushed red pepper flakes
  • 2 cups kale, chopped
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  • In a large pot, heat olive oil over medium heat. Add sausage, breaking it up with a spoon, and cook until browned (about 5-7 minutes).
  • Add chopped onion and garlic to the pot. Cook for an additional 2-3 minutes until the onion softens.
  • Pour in chicken broth and water, bringing the mixture to a boil.
  • Add the sliced potatoes, crushed red pepper flakes, and cook for 10-12 minutes, or until the potatoes are tender.
  • Stir in the kale and let it cook for 2-3 minutes until wilted.
  • Lower the heat and add the heavy cream. Stir to combine and season with salt and pepper to taste.
  • Let the soup simmer for another 5 minutes and serve hot.
